32oz organic chicken broth
1.5-2lb chicken breast
1 large vidalia onion, chopped
1.5 Cups chopped fresh celery (use the leaves too if available)
4 large fresh carrots, peeled/sliced
3 large Idaho potatoes, peeled/cut into bite size chunks
2 Cups frozen corn
1 Cup frozen lima beans
23oz organic tomato juice (add slowly until you get your desired taste)
1 T black pepper (I probably use closer to 2 T)
Salt to taste.

Empty the carton of broth into stew pot. Fill the empty carton with water and add to the pot. Bring to a boil and add chicken, onion, celery and carrot. When chicken is done (about 30 min), remove from broth and set aside to cool. Add potatoes, corn and lima beans into broth. Shred the chicken and add back to pot. Cook at least another 20 minutes longer. The longer the better. Add at least ½ of the jar of tomato juice to the pot and the pepper. Salt to taste. There will be salt in the carton of broth and the tomato juice…taste to determine your preference for saltiness.
