Makes 2 patties

1 7.5oz can salmon, drained**
½ t lemon juice
1 med egg
1 slice whole grain bread
Salt and pepper
Panko breading

Preheat oven to 350°. Spray a baking dish with oil.
In a medium bowl, flake the salmon and add lemon juice. Whisk the egg and mix in with salmon. Pinch bread into small pieces and mix into salmon mixture. Add some salt and pepper.

Pour some of the panko crumbs onto a small plate. Pat the salmon mixture into a patty and lay into the panko crumbs and coat both sides. Place on the baking sheet and spray the top with some cooking spray. Place in oven for 20 minutes.
